These are harvested in September. After selecting and sorting according to size the olives are crushed.

Traditionally the olives were crushed with a stone, but due to the large quantities, this is now done with a special crushing machine.

Once this process has been completed, the olives are placed in barrels with water where after several changes (of water) the olives lose their bitterness and finally with the use of brine (water with sea salt), they mature over the next 3 months – the required time for consumption.
